Keto Broccoli n’ Bacon Mini Quiche

Who doesn’t love quiche!  This one is a classic and another “go-to” snack that I often prep on the weekend so I have a bunch on hand for that “bite-on-the-run!”  In the pictures, these delicious minis are baked in 2.5″ diameter silicone cupcake rounds — so be sure to finely chop your ingredients.  Each cupcake offers 2 to 3 bites.

INGREDIENTS:

3 to 4 slices of bacon
1 cup broccoli florets, finely chopped
2/4 cup onion, finely chopped
1/2 of a roasted red pepper from a jar
2/4 cup cheese, grated
2 eggs
Salt and pepper to taste

PREPARATION:

Pre-heat oven to 400 degrees.

Fry the bacon to your desired texture – I typically don’t over-fry as they will have more cooking time in the oven. Once cooled, chop into small chunks.

Pre-prep the remaining ingredients.

In a large bowl, combine all ingredients.  Salt and pepper to taste.

Scoop mix into the cupcake rounds. Fill each to the top and just a bit over if you have enough.

Bake for approximately 25 to 30 minutes.
